hi, I would like to put in the footer of the English language the link to privacy and cookies as in Italy (obviously with links from different destinations) what should I do? I see that there is a reference (it) in copyright management

You must switch to language from admin bar. Take a look:
For eg. I added [EN] and [IT] text for easy find and replace it

can I remove the text from the paranthesis [xx] from both Italian and English and leave privacy policy - cookie policy?

Yes you can remove. Only switch to any language from admin top bar and go to Route -> Footer admin options. by the way I removed it for you right now.
